Diced Norwegian Salmon tartare with sesame-soy dressing layered between toasted baguette slices

Ingredients

12 oz  Norwegian salmon fillet, skinned and deboned
1  
.33 cups  extra virgin olive oil
3 tsp  rice vinegar
2 tbsp  Soy Sauce, light
2 tbsp  sugar
1 tbsp  sesame seeds, white
1 tsp  sesame seeds, black
.5 tsp  fresh cracked pepper
2 clove  garlic

Procedure

  • Preheat oven to 350°F. 
  • Cut the salmon into 1/4" pieces. 
  • Thinly slice baguette for sandwiches. 
  • Combine ¼ cup olive oil, rice vinegar, light soy sauce, sugar, white sesame seeds, black sesame seeds and fresh cracked pepper. 
  • Combine dressing with diced salmon and toss to coat evenly. 
  • Brush baguette slices with remaining extra virgin olive oil and toast in oven until lightly browned. 
  • Remove the bread from oven and rub with raw garlic cloves. 
  • Spread salmon tartare mixture on 1 toasted baguette slice and place on a plate. 
  • Place two more slices of baguette topped with tartare on top to form 3 layers.  
  • Repeat with remaining ingredients to make 4 servings.  

Serving Suggestion:

  • Serve with mixed greens salad.
  • Serve with chilled soba noodle salad.
