Norwegian Salmon stir-fried with a medley of broccoli, carrots, peppers and green beans create an Asian-inspired dish not to be missed

Ingredients

1.5 lb  Norwegian salmon fillet, skinned and deboned
1 oz  ginger, fresh
1 clove  garlic
6   scallion
.5 head  broccoli
3   carrots
1   bell peppers, red
.75 cups  green beans
.25 bunch  cilantro, fresh
3 tbsp  peanut oil
1.5 cups  Chinese stir-fry sauce
1 tsp  sesame oil
1   orange
   salt
   fresh cracked pepper

Procedure

  • Cut salmon into 1" cubes.  
  • Grate or finely chop ginger.  
  • Finely chop garlic and scallions. 
  • Cut brocoli into small florets.  
  • Thinly the slice carrots. 
  • Cut the bell peppers into 1/4" strips. 
  • Cut the green beans into 3" pieces. 
  • Chop the cilantro. 
  • Squeeze the orange and reserve juice. 
  • Heat wok over medium-high flame. Add peanut oil, then ginger, garlic and scallions. Cook for 30 seconds. 
  • Add broccoli, carrots, red bell peppers and green beans. Saute for 4-5 minutes. 
  • Add stir-fry sauce and salmon and cook for a further 3-4 minutes. 
  • Finish with sesame oil, orange juice and chopped cilantro.  

Serving Suggestion:

  • Serve with brown fried rice with scallions.
