Norwegian Salmon Fish Tacos

Prepared in a traditional Mexican-style marinade, these baked Norwegian Salmon tacos are topped with fresh vegetables, guacamole and lime sour cream

1.5 lb Norwegian salmon fillet, skinned and deboned
.5 head iceberg lettuce
2 tomato
4 tbsp lime juice
1.5 tsp cumin, ground
1.5 tsp garlic powder
.25 cups extra virgin olive oil
1 tsp paprika
.25 tsp cayenne pepper
.5 tsp oregano
.5 cups sour cream
8 6"-8" soft tortillas
Procedure
- Preheat oven to 375°F, if only marinating breifly.
- Cut salmon into 1" cubes.
- Shred the lettuce and chop the tomatoes.
- Combine half the lime juice, cumin, garlic powder, olive oil, paprika, cayenne pepper, oregano and pepper in a medium bowl.
- Place salmon in a baking dish and pour marinade over salmon. Marinate for at least 20 minutes or up to 2 hours refrigerated.
- Season salmon with salt, cover with lid or foil and bake at 375°F for 12-15 minutes, or to desired temperature.
- Combine sour cream with 2 tbsp lime juice.
- Serve salmon with warm tortillas, shredded lettuce, diced tomatoes, guacamole and lime sour cream.
Serving Suggestion:
- Serve with white rice and black beans.
