Norwegian Salmon baked with a spicy horseradish–mashed potato crust

4 each 5-6 oz Norwegian Salmon fillet(s)
1 tbsp extra virgin olive oil
2 cups mashed potatoes
1 tsp horseradish
.5 tsp fresh cracked pepper
Procedure
- Preheat oven to 400°F.
- Prepare baking dish with oil.
- Mix mashed potatoes with horseradish, salt and pepper.
- Spread 1/2 cup of potato mixture on top of each salmon fillet.
- Place on prepared pan and bake for 20-25 minutes to desired temperature.
Serving Suggestion:
- Serve with sauteed spinach and green salad.
