Grilled Norwegian Salmon and Fennel-Arugula Salad

Simple grilled Norwegian Salmon seasoned with fennel seeds and perfectly complemented by a fresh fennel-arugula salad
Ingredients

4 each 5-6 oz Norwegian Salmon fillet(s), skin removed
2 fennel
2 tbsp fennel seeds
3 oz arugula
4 tbsp lemon juice
4 tbsp olive oil
salt
fresh cracked pepper
Procedure
The amount of ingredients has been changed. Keep in mind:
- Cooking for more people takes longer time
- Be careful with salty ingredients and spices, you should add to taste towards the end
- Prepare the grill.
Salad
- Use mandoline to slice fennel thinly, starting with top of bulb and working toward root.
- Grind or finely chop fennel seeds.
- In a medium bowl add fennel, arugula, lemon juice, olive oil, and salt and pepper. Toss well and reserve.
Salmon
- Season salmon with salt, pepper and ground fennel seed.
- Grill over medium-high heat for 2-3 minutes on each side or to desired temperature.
- Serve salmon atop salad.
Serving Suggestion:
- Serve with dill-enhanced mashed potatoes.
